A Taste of Ireland: Hyde Whiskey a True taste of Ireland.

is a beautiful new whiskey produced by two brothers Alan and Conor Hyde in West Cork more detail on the whiskey to follow.

Firstly I would like to give some background to the first ever Hyde Whiskey video above. A video which is my first  straight up marketing video, in a more traditional sense. The video was produced, shot and edited by myself. Conor from Hyde gave me the brief that he wanted to get across the beauty of Ireland, the clean waters we have, the wood the whiskey is stored in and most of all show the world what a real Irish pub session looks like. The rest he left to me as I am glad to say he trusted my artistic sensibilities from the work I had produced before.

I wanted to bring a contemporary feel to the video and do what I do best which is showing the real Ireland, I was appalled to be honest at some of the whiskey videos in circulation showing a fictitious Ireland, one I certainly don`t live in, Im not saying mine is any better but I showed real landscapes, and real businesses and a scene from my local pub so it is very real for me.

The video was a composite of some video footage from Aircam Aerial photography which I edited and footage I shot at Inch beach with Swell Surf school, a real, functioning local business and the legendary pub Poc Ar Buile at Ballinrostig. see earlier post here https://atasteof-ireland.com/2012/09/29/a-taste-of-ireland-poc-ar-buile-ballinrostig-where-everybody-knows-your-name/

Poc Ar Buile was my local at the time and I knew it would be perfect for the video. It is a really special pub, warm, welcoming and full of comfortable atmosphere. And Mike the landlord is probably the friendliest man you`ll ever meet, ( although he was a bit dubious at trying a new whiskey, to be fair) :-). Poc Ar Buile is in my view the archetypal Irish pub, the one every tourist coming to Ireland, wants to experience and taste stout in for the first time. So thanks to all who appeared in the video, Crafty hands pottery, Sheila Hennessy, Swell surf school and friends, Mike & Poc Ar Buile, Peter Dobbyn (the man on guitar) and all those regulars who had to put up with a bit of filming.

Conor wanted to use the song Skibbereen and at first I was hesitant,  until I heard a version by Claire Dillahunty an American singer which was haunting. I felt the haunting delivery, the lyrics of famine and hardship and the age old Irish tale of being forced off the land and finally having to leave your homeland would contrast well with modern Ireland, where we now have a thriving food & dink industry producing new whiskeys, where we surf and we still have great pubs and a majestic landscape to explore. I wanted to show visitors an experience of modern Ireland. Come to Ireland, see the landscape, surf, see our beaches, have some fun in the pub taste our produce,

live life, taste life, taste Ireland.

I hope I got this across and to be fair the advert is to appeal to visitors to Ireland because Im afraid us natives never appreciate what we have in front of us.

 The Whiskey

Hyde whiskey  has become a multi award winning Irish whiskey having already won the title of best Irish single malt whiskey in the world this year.

HYDE Single Malt Irish whiskey is made from 100% malted Irish barley, distilled at a single location. It is made in small batches on a traditional copper pot still. Then matured for over 10 years in flame charred, first fill, ex-bourbon casks from Kentucky in the U.S.A., before finishing for a further six months in either a Sherry or an Oak cask.

THE SHERRY FINISH

At HYDE we use TWO different casks to age our Sherry finished whiskey.

The majority of the Irish whiskey industry typically use only Bourbon casks for their entire maturation process, these are sourced in the USA.

STAGE 1 For the First 10 years Hyde single malt is aged in flame charred, first fill, 200L Oak Bourbon barrels, from the USA.

STAGE 2 For an additional 10 months we transfer HYDE into toasted Oloroso sherry casks, 250L ‘Hogshead’ casks made from white oak, from Cadiz in the Andalusia region of South West Spain.

WHY? The flamed bourbon casks initially add a sweeter vanilla and caramel flavour, followed by the toasted sherry casks which add a nutty, spice, dried fruit, and toffee character to the final dram.

WORTH IT Sherry oak casks are far more expensive but our view is that they are worth it for the richer character they add to our final HYDE whiskey. (Oloroso Sherry cask cost €800 each. Bourbon Casks cost just €80 each!)

SHERRY CASK FINISH ~ TASTING NOTES

NOSE Delightful peaches & cream, vanilla, barley malt softness, with citrus, sweet, honey, caramel, chocolate, orange, lemon, banana, & infused with spices.

TASTE Wonderfully smooth yet complex, creamy yet fruity with notes of caramel and Manuka honey, apricot, plum, and a silky malt texture.

FINISH Rich, Spicy, & Oaky. It lingers in the mouth with a long rich finish.

THE RUM FINISH

At HYDE we use TWO different casks to age our Rum cask single malt.

STAGE 1 For the First 10 years Hyde single malt is aged in flame charred, first fill, 200L Oak Bourbon casks, from the USA.

STAGE 2 For an additional 8 months we transfer HYDE into 200L charred Dark Caribbean Rum casks.

WHY? The flamed bourbon cask initially adds a sweeter vanilla and caramel flavour, followed by the charred dark Rum cask which add a sweet spicy rum character to the final expression.

WORTH IT Premium dark Caribbean Rum casks are hard to find and are far more expensive to import all the way from Barbados to Ireland, but in our view they are worth it for the rich fuller character they add to our final HYDE Single Malt whiskey. (Rum casks cost €900 each. Bourbon Casks cost just €80 each!)

RUM CASK FINISH ~ TASTING NOTES

NOSE The aroma is rich with notes of tropical fruits from the Caribbean, passion fruit, vanilla and butter toffee.

TASTE Notes of Sweet rum, vanilla, ginger and lime with back notes of apple mango and orange in the background.

FINISH Rich and Spicy with a buttery vanilla finish.

  • The Hyde family have a long tradition of being involved in the Irish drinks business. From 1640 until 1962 the family ran a tavern located just outside the picturesque town of Bandon in West Cork.
